I read through or browsed about 20 peer-reviewed studies today and came up with some dietary guidelines for enhanced melanoma-fighting power. It's interesting that there really does seem to be an inverse relationship between the following foods and melanoma incidence/recurrence/or metastasis:
* foods containing beta and alpha-carotene, foods containing lutein and lycopene, high soluble carbohydrate intake, high protein foods, vitamin D, magnesium, zinc and folate
It's also interesting that in no case does augmenting your diet with supplements seem to help. Apparently it's best to eat a well-balanced diet, high in fiber and vegetables and stay away from fat and alcohol. Sheesh, any dummy could have figured that one out. :)
--- The anti-melanoma diet ---
eat foods with the following characteristics:
high carbs (soluble), high protein
vegetables (green/yellow)
fruits (green/yellow)
fish
cereals/grains
fiber
eat foods rich in the following vitamins, minerals, or compounds:
vitamin D
retinol
B vitamins
folate
magnesium
zinc
alpha-carotene
beta-carotene
magnesium
fiber
cryptoxanthin
lutein
lycopene
avoid intake of:
alcohol
fat/saturated fat
linoleic acid
limit intake of:
vitamin C
behavioral:
exercise/burn fat
wear sunscreen
good hygiene (dental, esp.)

I have been researching the scientific literature intensively for a couple of years and can see why you have suggested the above list of foods as potentially being beneficial against melanoma. However I have not come across any study with humans, mice or in test tubes that supports

the benefit of high soluble carbohydrate intake to be good against any cancer. If anything w.r.t. excess carbohydrate, I have seen research that high soluble carbs would feed tumors and increase their growth and spread. Can you please post citations that support the high soluble carb claim? I'm skeptical about the "high" protein also Otherwise it's a good list.
